Are Your Meals Fertility Friendly?

With fall coming and the need for hearty breakfasts on the rise, we thought we’d share one of our favorite fertility-friendly recipes!

The recipe is gluten-free, contains only minimal oil and uses a small amount of agave nectar for low-glycemic sweetening. Feel free to experiment with other warming spices including cinnamon and nutmeg. Chia seeds provide a great source of omega-3 fatty acids but don’t add the phytoestrogen load that flax seeds do. Play with different dried berries or dried cherries. Any kind of nut works great.

This granola is great served over plain full-fat Greek yogurt (Why full fat? Read our low fat dairy blog) or just munched straight from the canister as a snack.

Get-Pregnant Granola

    For 10-12 cups of granola:

  • 4 cups rolled oats (preferably organic)
  • 3 cups unsweetened, dried and shredded coconut
  • 2 teaspoons cardamom
  • ½ cup canola oil
  • ½ cup organic agave nectar
  • 1 teaspoon natural vanilla extract
  • ½ teaspoon natural almond extract
  • 2 cups toasted almonds, walnuts or cashews, chopped into large pieces
  • 1 cup dried blueberries
  • ½ cup chia seeds
    • Preheat the oven to 325 degrees. Line two rimmed baking sheets with parchment paper.

      In a large bowl, combine the oats, coconut, and cardamom and set aside.

      In a medium bowl, whisk together oil, agave nectar, and vanilla and almond extracts. Pour the wet ingredients over the dry and gently stir until the dry ingredients are evenly coated. Divide oat mixture between the two prepared baking sheets, and spread evenly.

      Bake for 10 minutes. Remove from oven and stir in the nuts and chia seeds, and bake for 20 minutes longer. Stir once during the second baking period, switching racks for the pans to ensure even cooking.

      Remove granola from the oven and stir in the dried berries. Allow to cool completely and store in a plastic bag.
